SAINT ROMAIN "Sous le Chateau" 2021

Facing South/South-East, this plot is located under the ruins of an old castle, at 370 meters on the hillside exposed in broad sunlight. The plant grows in a very shallow soil on hard limestone, and its roots draw the nutrients from the faults. This Saint-Romain “Sous Le Château” is therefore the result of a subtle harmony between the solar maturity of the climate and the rusticity of its soil : a powerful, structured wine, full of richness with fat and body. The taste of apricot, peach, spices, and the mineral notes will develop delicious aromas of white truffle after 8 to 10 years.
